egg-stravaganza chocolate fudge cake
for the cake:
150g plain flour
40g cocoa powder
300g light brown sugar
1.5 tsp baking powder
Buttermilk 200ml
3 eggs
30ml espresso
150g Tony's pure dark chocolate
150g butter
for the icing:
300g butter
600g icing sugar
90g cocoa powder
150g Tony's milk chocolate
4 tbsp milk
for the drips:
50g Tony's milk chocolate
for the nest:
150g Tony's milk chocolate
65g cornflakes
for the decoration:
Tony's egg-tastic mixed pouch & egg-stra special eggs.
method:
1. Preheat your oven to 160C/140C Fan. Grease & line two 6 inch cake tins.
2. Melt your chocolate and butter and set aside to cool. Mix all your dry ingredients into a bowl together.
3. In a separate bowl mix your eggs, buttermilk and espresso.
4. Pour your wet mix and chocolate mix into your dry ingredients. Mix till smooth then add into your tins and bake for approx 1 hour until a toothpick comes out clean.
5. Let your cakes cool completely then slice each cake in two so you have 4 layers.
6. Now for the icing, melt your chocolate then set aside to cool slightly. Cream your butter till pale then add in your icing sugar and mix. Mix in your cocoa powder.
7. Now add in your chocolate and mix. Add in your milk tbsp at a time until you have a smooth spreadable mix.
8. Let's layer our cake! Layer using your fudge icing and some crushed Tony's eggs. Do a crumb coat and chill for 30 mins.
9. Now do your final icing layer and smooth out how you like. Chill for 30 minutes.
10. Melt the chocolate for your drip and drizzle around the side of your cake. Place in the fridge while we make the nest.
11. Melt the chocolate for your nest then mix through your cornflakes, place this mix all around the top of your cake to create a nest. Chill then fill with Tony's eggs!
